magarita-style drunken steak w/ lime and cilantro rice

Last Weekend we had a few friends over for dinner. We had not entertained in awhile and it was a delightful evening. I served the following menu~

Tangertinis
Barefoot Contessa Guacamole
Summer Garden Salad
Margarita Style "Drunken" Steak
Lime & Cilantro Rice
Death by Chocolate Trifle


I took a few photos before our guests arrived. The meal was delicious. I have never received so many compliments on a rice dish. I made it up myself based on watching what they did to the rice at Chipolte Mexican Grille. I LOVE their rice and was trying to figure out how to duplicate it. I think I was very successful. The recipe for the steak and rice are below. You can find the recipe for the trifle here. I used kaluha and fresh whipped cream. Yummy!

Margarita - Style Drunken Steak
Cooks Country Magazine - July 2008

I flank steak (about 1 1/2 pounds)

Whisk Together -
3/4 cup tequila
1/4 cup triple sec
1 tablespoon granulated sugar
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper

in a bowl until sugar dissolves. Transfer 1/4 cup of the marinade to a small bowl and stir in 1 tablespoon freshly chopped cilantro ; set aside.

Place remaining marinade in a gallon size freezer bag with the steak. Marinate for 1-4 hours in the fridge.

Remove steak from bag and pat dry with paper towels, and discard marinade. Grill steak over hot fire until well browned and cooked for desired doneness, 4-7 minutes each side.

Transfer to cutting board and let rest for 5 minutes. Slice thinly, plate and drizzle with reserved marinade.

Lime & Cilantro Rice

2 cups cooked rice ( I used Basmati rice, very light and fragrant)
1/2 cup lime juice
1/2 cup finely chopped cilantro

Stir together and enjoy!
So easy!
