Something Scrumptious for a Monday...


Banana ~ Oatmeal Bread w/ Blueberries and Walnuts
recipe from Cooking Light Magazine

1 1/2 cups all-purpose flour
(I split it between reg flour and whole wheat pastry flour)
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup regular oats
1 cup mashed banana
(2-3 large bananas)
1/2 cup buttermilk
1 teaspoon vanilla extract
1/4 cup canola oil
2 large eggs, lightly beaten

Add-Ins
1 1/2 cup fresh or frozen blueberries
1 cup chopped walnuts
or
1 cup mini-chocolate chips
1 cup chopped walnuts

Preheat oven to 350 degrees. Combine first 5 ingredients and whisk together in a bowl stirring well. Add oats and stir.
Combine mashed banana, buttermilk, canola oil, vanilla extract and eggs. Add flour mixture stir until just moist. Put in your add-ins. Stir gently.

Spray loaf pan or line muffin tins with paper liners.

Bake loaf @ 350 for 1 hour
or
Bake muffins at 350 for 25 min.
Cool for 15 min in pan, remove and enjoy!
