snowmageddon and hot dip...


Hello My Dear Blogging Friends,
We are still alive here in Northern Virginia. There is three feet of snow outside my window with eight more inches expected on Tuesday. Yeah us! The electricity keeps going in and out but the internet and phone are finally back after two days. The boys are getting a little tired of shoveling and the snow is too light for good snowballs. Hopefully with the help from the sun today that will change. Since school is already cancelled, tomorrows Project Snowman is on!!

As for me, I have been reading, writing and spending LOTS of quality time with the fam. As the electricity has finally come back, I have gotten back in the kitchen to make snacks for this evenings big game. So far the big hit is a simple cheese dip I got from Taste of Home Magazine. Talk about a pantry pleasing recipe, everything comes from a can but the Velveeta.

Hot Chili Dip
from Taste of Home Holiday Recipe Collection

1 jar (24 oz) salsa
1 can (15 oz) chili with beans
2 cans (2 1/4 oz each) sliced ripe olives, drained
12 oz process cheese, cubed
Tortilla Chips

In a 1 1/2 quart slow cooker, combine the salsa, chili and olives. Stir in cheese. Cover and cook on low for 1-2 hours or until cheese is melted, stirring halfway through. Serve dip with tortilla chips.
