We're grillin and chillin this week my friends. The heat wave has made it's way east and there is no way I was going to turn on my oven. Well, I lie. I did turn on the oven for the dessert that I will share this weekend on Sweet Sunday's. You'll have to stop in and say hello. It will be well worth the click!
Anyway...back to this weeks selection for Tasty Tuesday...the mighty, the awesome, the amazingly (if you forget the cheese) healthy, big, beautiful bursting with flavor Chicken Parmesan Burger tweaked slightly from the original recipe shared in the July/Aug '12 issue of
Cuisine at Home.
As a long time subscriber of this magazine, I am always delighted at how simple, yet flavorful the majority of their recipes are. This one is no exception. This burger is moist and tastes just like Chicken Parmesan. The crispy grilled ciabatta bread just sends it over the edge into awesomeland.

Chicken Parmesan Burger
Ingredients:
1 1/2 lb ground chicken
1/2 cup shredded onion
2 teaspoons minced garlic
1 1/2 teaspoon dried basil
1 1/2 teaspoon dried oregano
4 slices fresh mozzarella- 1/4 inch thick
1/4 cup grated Parmesan
add salt and pepper to taste
jar or homemade marinara sauce
4 slices Provolone
4 ciabatta pieces, halved, grilled 4-inch
fresh basil leaves
Directions:
Preheat grill to medium-high. Brush grill grate with oil. Coat a sheet of parchment paper with non-stick spray.
Pulse chicken, garlic, dried basil and oregano in a food processor just until combined. Divide meat into 8 portions and shape into 1/4 to 1/2 inch thick patties in 2 rows on prepared parchment using a fork.
Top half the patties with a slice of mozzarella and 1 T parmesan, season with salt and pepper and cover with remaining patties. Seal the edges of the burger with a fork, season with salt and pepper, and coat with nonstick spray.
Grill burgers, covered, 4 minutes. Flip burgers and top with marinara and provolone slices; grill, covered to well done, 4-5 minutes more. Remove burgers from grill, tent with foil, and let rest 5 minutes.
Place each burger on a bottom ciabatta half, top with basil leaves and top ciabatta half.
