meatless friday ~ chunky guacamole...


I love guacamole. I have been making the Barefoot Contessas recipe for years, but recently stumbled upon this version. I think I have a new favorite. 

This recipe is genius in this way. By putting all the herbs and juice in a bowl to let sit, allows the juice to be absorbed so when it's combined with the avocados, they don't turn brown. Seriously...this never turned brown. Awesomesauce people!! I love the spicy zingy bite each scoop brings to the table. 

This would be perfect this weekend as you enjoy cheering for your favorite football team.

Chunky Guacamole

Ingredients:
3 scallions, green and white parts separated and sliced thin
1 jalapeno chile, stemmed, seeded, and minced
3 small clove garlic, minced
1/2 tsp finely grated lime zest plus 3 TBS juice
4 avocados, halved, pitted, and cubed
4 Tbs chopped, fresh cilantro
salt

Directions:
1.  Combine scallion whites, jalapeno, garlic and lime juice in a large bowl.  Let sit for 30 minutes.

2.  Add 2/3 of avocado pieces to bowl with jalapeno mixture and mash with potato masher until smooth.  Gently fold remaining avocado pieces into mashed avocado mixture.  Gently stir in lime zest, scallion greens, and cilantro.  Season with salt to taste.  Serve.
