The Ultimate Recipe Swap is all about keeping Cooool. Since I began adjusting my diet to include less sugar and simple carbs, finding something to satisfy my sweet tooth has been somewhat challenging. I LOVE ice cream but the fat content alone will do my cholesterol no favors. So, the search was on for something cold and creamy to replace my beloved dessert.
This sublime little diddy was an answer to my prayers. The creamy texture of the ricotta layered with crisp fresh lemon and a back splash of vanilla. Topped with fresh fruit macerated with a little Grand Marnier...Sweet!

Lemon Ricotta Cream
Ingredients:
2 cups part-skim ricotta cheese
I tablespoon grated lemon peel (2 lemons)
1 tsp vanilla extract
3 teaspoons confectioners sugar
Topping:
select 1 1/2 cups of fresh berries (blueberries, strawberries, blackberries) and soak them in 2 tablespoon of Grand Marnier for an hour or more.
Preparation:
Mix together the ricotta cheese, lemon peel, vanilla extract, and sugar. Top with berries. Serve chilled.
