A fabulous way to use all the cherry tomatoes from your garden! |
This recipe is easy coming together in less than 30 minutes and it uses ingredients in season...BONUS! The shrimp were tender and the pasta held onto the light "dressing" beautifully. Then of course there was the light sprinkle of goat cheese...yummo!
It is the perfect summer weekday dish.

1 (16 ounce) package angel hair pasta
2 pints grape tomatoes
1/4 cup extra virgin olive oil
4 cloves garlic, thinly sliced
1 pound peeled and deveined shrimp
1 tablespoon red wine vinegar
1 teaspoon sugar
1 teaspoon salt
4 ounces goat cheese, crumbled
1/4 cup chopped fresh parsley

Spread tomatoes in a single layer on baking sheet. Drizzle with olive oil, stirring to coat. Add garlic to pan stirring to combine.
