This weekend we had the privilege of celebrating a birthday with our dear friends the Silva's. Their sweet HB was turing 15 and she requested this fabulous dish for her birthday dinner. It is a long standing tradition on her birthday that she gets to chose what's for dinner. This year her Dad made his famous Luau Pork. He is part Hawaiian and loves to prepare some of the native dishes from his youth growing up in Hawaii.
This pork is succulent and has a subtle smoky flavor. It is fairly simple to make in the crock-pot and you can find the banana leaves at your local grocery store in the produce department. It feeds crowd so is perfect for parties. Chris served it with grilled vegetable skewers, grilled pineapple, rice and watermelon. A perfect meal for a hot summer afternoon.
This is Jerry's favorite meal, besides chicken fried steak. Thanks DQ for sharing a part of your culinary history with me.

DQ's Luau Pork
recipe from Deacon MQ Silva
Ingredients
4 pound pork butt or shoulder
1/4 cup of rock salt
(some of my readers have tried this recipe and found it too salty using 1/2 cup of salt in the original recipe, so I have lessened the salt to 1/4 cup)
2 Tablespoons of Liquid Hickory Smoke
2 cups of water
Banana leaves
Directions
Place two leaves in the crock-pot in the form of a T
Rub salt on the entire butt or shoulder
Place butt or shoulder into pot with the fatty side up
Pour the smoke on top and rub into salt
Finish wrapping the pork with the leaves
Pour water into the bottom of the crock-pot
Cook on HIGH for a good 6-8 hours
Pull apart, serve and eat well!

ReplyDeleteI have not cooked with banana leaves before, but this is a great reason to start. :) Birthday traditions are important, our kids get to choose their birthday dinner and they always look forward to it. Thanks for sharing on Hearth & Soul Hop. :)
