What a neat recipe and a delicious way to use zucchini.
ReplyDeleteHi Mary! I didnt get to put up my butternut squash soup this week, but I will next week! Still savoring the few jars I put up! Seriously, aren't casseroles such a trip? When you look at the ingredients, most times they never sound like they are going to work out well, but in the end, the cook who created them, usually knew what she was talking about! I adore beef with zucchini because my mother used to stuff HUGE zucchinis with beef and rice mix and this casserole looks like somethign I would love! All the best and thanks so much as always for your support of the hearth and soul hop! :) Alex@amoderatelife
