tasty tuesday ~ beef and zucchini casserole

filled with yummy veg and so good...
This recipe was a surprise. As I was putting it together I questioned the combination of the stuffing mix with beef and tomatoes. It didn't seem right to me but my husband really wanted to give this one a try and I am glad I listened to him. The recipe comes from my Dream Dinners cookbook and turned out so much better than I thought it would. The stuffing added a nice crunch on the top with the zucchini taking center stage. The boys LOVE zucchini and this casserole uses quite a bit of it. The end result is a tasty hearty and healthy meal that freezes beautifully. It was easy on the wallet as well.

Beef and Zucchini Casserole
 recipe adapted from Dream Dinners


Ingredients:
3 cups zucchini, cut into 1 inch rounds
1 cup yellow onions, diced
½ pound ground beef, browned and drained
1 teaspoon minced garlic
1 teaspoon dried basil
1 tablespoon sugar
2 teaspoons dried oregano
½ teaspoon garlic salt
½ teaspoon black pepper
1 28-ounce can diced tomatoes with juice
1 ½ cups seasoned dried stuffing mix
½ cup grated Parmesan cheese
1 cup shredded part-skim Mozzarella cheese


Directions:
1. Spray one 9x13 baking dish with nonstick spray
2. Layer the ingredients in the dish in the order listed.
3. Preheat oven to 375 degrees.  
4.Bake uncovered for 1 hour or until the top is golden brown and the vegetables are fork tender.

  3. Hi Mary! I didnt get to put up my butternut squash soup this week, but I will next week! Still savoring the few jars I put up! Seriously, aren't casseroles such a trip? When you look at the ingredients, most times they never sound like they are going to work out well, but in the end, the cook who created them, usually knew what she was talking about! I adore beef with zucchini because my mother used to stuff HUGE zucchinis with beef and rice mix and this casserole looks like somethign I would love!
