tasty tuesday ~ salmon croquettes...


Moist delicious salmon filled with zippy flavor...very yummy indeed.

We are into our second week of meatless meals here at Chez Lenaburg. We did enjoy a brief respite on Sunday with some old fashioned fried chicken, potato salad and cole slaw. But Monday through Saturday through Lent, meatless it will be. 

Finding new fish recipes that my family would actually eat has been a wee bit of a challenge. My guys are not huge fish lovers. Shrimp, scallops, crab meat...they love. The kind of seafood with gills, not so much. So I was thinking about making crab cakes but the cost of lump crabmeat is a bit prohibitive at the moment. So when I saw these little bites of delight I knew I had to give them a try. 

My son does not love salmon. White fish he may tolerate but salmon...not his favorite...at all. That was the second challenge, to "hide" the salmon as much as possible while still keeping it healthy. I have to say these did not disappoint. They were moist and filled with some really nice flavor. The sweet red peppers and green onions supported the salmon instead of overwhelming it. 

I served them on a bed of greens and some chopped veggies. It was a light and healthy meal. And yes, my son did eat them and announced that salmon wasn't so bad after all.

Laid on a bed of fresh greens drizzled with 
Salmon Croquettes

Ingredients:
1/4 cup mayonnaise, divided
4 teaspoons fresh lemon juice, divided
2 1/2 teaspoons Dijon mustard, divided
1/4 cup finely chopped green onions
2 tablespoons minced red bell pepper
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground red pepper
2 salmon filets, cooked and flaked
1 large egg, lightly beaten
1 cup panko (Japanese breadcrumbs)
1 tablespoon canola oil
1 tablespoon chopped fresh parsley
1/2 teaspoon minced garlic
1/8 teaspoon salt

Preparation:

1. Combine 2 tablespoons mayonnaise, 1 tablespoon juice, 1 1/2 teaspoons mustard, and next 7 ingredients (through egg), stirring well. Add panko; toss. Shape mixture into 8 (3-inch) patties.

2. Heat oil in a large skillet over medium heat. Add patties; cook 5 minutes on each side or until browned.

3. Combine remaining mayonnaise, juice, and mustard with parsley, capers, garlic, and salt, stirring well. Drizzle over croquettes and serve.

  1. My kids have been asking for Salmon patties....it has been months, maybe last Lent that I made them....I will give these a try, they sound great.

  2. I call these salmon burgers and my boys will eat them. Not every night, but they do enjoy - I substitute parm cheese for the breadcrumbs for a richer flavor...

  7. My son doesn't like salmon either! It must be a 'boy' thing :) I'll have to get him to try your Salmon Croquettes. They sound wonderful, and look delicious in the photograph. I like the green onions and red peppers you have used, and the Dijon mustard too.
