tasty tuesday ~ angel hair pasta with roasted tomatoes and shrimp

A fabulous way to use all the cherry tomatoes from your garden!

My garden is bursting with cherry tomatoes...and I mean bursting! So over the past week I have been looking for recipes to use the vast quantities of tomatoey goodness. I headed back to the magazine that gave me last weeks Tasty Tuesday entry and found this little gem. Anything that uses goat cheese is bound to become a family favorite we love it so. 

This recipe is easy coming together in less than 30 minutes and it uses ingredients in season...BONUS! The shrimp were tender and the pasta held onto the light "dressing" beautifully. Then of course there was the light sprinkle of goat cheese...yummo!

It is the perfect summer weekday dish.

Angel Hair Pasta w/ Roasted Tomatoes & Shrimp
adapted from Paula Deen's Magazine, May 2012

1 (16 ounce) package angel hair pasta
2 pints grape tomatoes
1/4 cup extra virgin olive oil
4 cloves garlic, thinly sliced
1 pound peeled and deveined shrimp
1 tablespoon red wine vinegar
1 teaspoon sugar
1 teaspoon salt
4 ounces goat cheese, crumbled
1/4 cup chopped fresh parsley

Preheat oven to 400 degrees.  Line a rimmed baking sheet with foil.  Cook pasta according to package directions

Spread tomatoes in a single layer on baking sheet.  Drizzle with olive oil, stirring to coat.  Add garlic to pan stirring to combine.  Bake, stirring halfway through, for 20 to 25 minutes or until tomatoes begin to burst.  Add shrimp to tomato mixture, and bake for 3 to 4 minutes, or until shrimp are cooked through.  

Add vinegar, salt and sugar to shrimp mixture, stirring well.  Spoon over cooked pasta.  Top with goat cheese and parsley, tossing gently to combine.  Serve immediately.

  2. What a wonderfully delicious recipe, so fresh and lovely for summer! I'm a little envious of your cherry tomato crop :) I've only just been able to plant my veggies due to the terrible weather we have been having in the UK, and my tomatoes are struggling. I do love pasta dishes like this though, and your Angel Hair Pasta with Roasted Tomatoes and Shrimp looks just mouthwatering!
